Crispy Green Chicken is a fusion dish between south Asian and oriental cuisines. A green sauce made with green chilly and gram flour paste makes a unique marinade that lends to the distinct taste. It is served with a Green Sauce, which is made during cooking the chicken.
Crispy Green Chicken: Ingredients
For four people
- Boneless Chicken – 300 grams
- Cashew nuts – 100 grams
- Garlic – 1 clove
- Karipatpa- as many leaves in 3-5 twigs
- Coriander leaves -1 twig
- Gram flour- 2 spoonful
- Green chilly – 6 pieces
- Butter / Ghee- 1 spoonful
- Juice from a half slice of lemon
- Salt- to taste
Crispy Green Chicken: Cooking Procedure
Cut the chicken into small pieces, wash and dry. Add the lemon juice and salt, allow the mixture some time.
Heat a frying pan with ghee (Indian clarified butter) or butter. Then fry cashew nuts and garlic in it.
Add gram flour to the mixture above. Stir continuously. Now add the chopped, green chillies, coriander leaves, curry leaves and salt. Fry well.
Done that, you will get a green marination paste. Add chicken pieces into that. Allow the chicken to marinate for 10 minutes.
Now, fry the marinated chicken pieces in sunflower oil till they are cooked. Once done, pick up the chicken pieces only. Allow the dry gravy to be cooked for some more time. Once that is done, add the chicken pieces back to the pan. Stir for some time so that the spice paste gets soaked into the chicken pieces. Do not add any water.
It’s a very delicious dish. And interestingly, it doesn’t require onion and ginger.
Recipe for the Green sauce
It’s rather easy to make using ingredients used in the above preparation.
In the preparation above, when the Green paste gets ready, take out four/five tablespoons from it. Add generous amount of yogurt. Knead the mixture well and keep in a clean refrigerator.
Once the Green sauce becomes cold, serve the chicken preparation with the green chutney.
