Lemongrass Chicken Curry Recipe

Lemongrass chicken curry is an Indian style aromatic chicken curry that uses  oriental herbs. Cooked in a whte gravy rich in lemongrass flavor, this easily digestible chicken dish will win your taste buds easily. The spices used in this dish are a select few that hold on to their own even after the cooking. 

Lemongrass White Chicken Curry: Ingredients

  1. Chicken-  500gms
  2. Curd-  1 Cup
  3. Salt-  to taste
  4. Black Pepper Powder- 1tsp
  5. Sugar- 1tsp
  6. Ginger Garlic Paste-  1tsp
  7. White Oil-  2 tbsp
  8. Green Cardamom- 4 
  9. Star Anise- 1
  10.  Cloves-  4
  11.  Black Pepper Seeds- ½ tsp
  12.  Onion,  Finely chopped- 2
  13.  Green Chillis-  4
  14.  Cashewnut Paste-  ½ Cup
  15.  Lemongrass stems, finely chopped- a handful

Lemongrass White Chicken Curry: Cooking Procedure

  1.  Create the Marinade: Take washed chicken pieces, ginger garlic paste, black pepper powder, curd and salt together in a large mixing bowl. Mix them well using a wooden spatula. Keep aside the marinade for 30 minutes

  2. Heat a frying pan on medium flame and pour white oil. As the oil tends to boil, add green cardamoms, cloves, star anise, black pepper seeds and chopped onions in succession

  3. Stir the herbs in oil, fry them together until the onions develop a brownish hue

  4. Next, add chopped lemongrass to the herbs fry and stir for a few more minutes on low flame

  5. Next, add marinated chicken pieces into the frying pan and cook until the mixture starts giving off oil

  6. Add green chillies and  cashew nut paste now, keep stirring for a few minutes more

  7. Last but not least, add a pinch of sugar, mix well. Add about 50 ml of warm water to ease the gravy. Cover the pan with a lid

  8. Let the curry be cooked for 6-8 minutes more

  9. Once done, sprinkle chopped lemongrass and onion rings over the curry to garnish.  Now turn off the flame and allow the curry to settle for about 10 minutes. Then serve it with long grain rice or chapatis (Indian hand-rolled breads)
