Pumpkin Halwa or Pie

Pumpkin Halwa is not exactly similar to Pumpkin Pie that’s such a popular dessert in the west, but we can use some approximation here. The point is, one can jolly well cook the Pumpkin Pie the Indian way or can create a fusion if one is creative. The following recipe turns ordinary pumpkin into a delicious dessert that kids and adults alike are going to love.

Pumpkin Halwa: Ingredients

Sweet pumpkin – 250 grams
Milk-   1/2 litre
Sugar-   50 grams
Cashew Nuts –  10-12 pieces
Raisins-  a generous amount
Ghee –  2 tsp (Indian Clarified Butter)
Green cardamom- 3-5 pieces 


Pumpkin Halwa: Cooking Procedure

Make a fine grate of the pumpkin.  

Heat ghee in a frying pan. Once it melts, throw the green cardamoms into it and fry for 30 seconds.

Fry cashews and raisins in ghee, and take them out using a sieve. 

Next, pour grated pumpkin into the frying pan. Fry until the raw smell of the pumpkin is gone. 

In another container, boil milk to a condensed state. 

Now add the condensed milk to the fried pumpkin. Add raisins and sugar. Stir continuously for some time. See that the mixture thickens to a semisolid state. 

How would you know when your Halwa is ready? When it’s done, the Halwa will no longer be sticking to the pan, it can be scooped easily. The ghee will also start getting separated.
