Rabri Malpua Recipe

This tasty, creamy Indian dessert is made easily with just five readily available ingredients. Rabri is a favourite dessert all over India. Malpua is a sweet rice pancake. Together they create a rollicking harmony of taste. Kids are going to love it. The following recipe-

Rabri Malpua: Ingredients

 Full cream milk- 1 litre

 Wheat flour- 1 bowl

 Sugar- 1 bowl

 Small cardamom – 8 pieces, ground 

 Ghee or Indian Clarified Butter- Use generously   for frying 


Rabri Malpua: Cooking procedure

Heat one litre of milk in a saucepan until it condenses to half the original volume. While heating, stir the milk continuously with a ladle to avoid the formation of a semisolid layer of milk fat on the surface.  

Once the milk attains a density that you see in condensed milk, remove it from the stove and allow it to cool down. Once it’s cold, start adding flour in it all the while stirring the mixture. Bring the mixture close to a semisolid state. Cover it and allow it to settle for half an hour.

Meanwhile, prepare dense sugar syrup by adding the sugar to 1 cup of water. Heat mildly to dissolve the sugar completely.  

Now, take the milk-flour mixture and add some cardamom powder to it. Stir well. 

Next, heat Ghee on medium flame in a nonstick frying pan. When the Ghee melts completely, pour one ladleful of the mixture and fry it till it develops a reddish colour. Take it out of the frying pan using a sieve and dip it into the sugar syrup. Allow it to soak for two minutes. 

Then, repeat the above process for the rest of the mixture.
