The yellow, puffy Dhoklas garnished with mustard, green chillies and sweet sauce needs no introduction. For those new to Indian cuisine, Dhokla is the ubiquitous Gujrati (Indian state) snacky cake found all over India and beyond. Baked properly, it is very tasty and you can fine-tune the savouriness or the sweetness of it to your choice. Dhokla is high on vegetarian protein and is an excellent low-carb food.
Dhokla Ingredients
- Bengal gram powder- 2 cups
- Curd- 5tbsp
- Turmeric powder- ½ tbsp
- Baking soda – 1Pinch
- Chopped Ginger- 1tbsp
- Green chilli pepper- 5 or 6 whole
- Chopped Green chilli pepper- 1tbsp
- Sugar- ⅖ tbsp
- Salt- to taste
- Oil- 3 tbsp
- Mustard seeds – ½ tbsp
- Curry leaves- 10 or 12 pieces
- Asafoetida- ½ tbsp
Dhokla: Cooking Procedure
Make a mixed dough using fresh Bengal gram powder or Besan, turmeric powder, salt, asafoetida, 1tbsp sugar, chopped ginger and green chilli peppers, 1tbsp oil, baking soda & water. Besan needs to be fresh in order to make your Dhokla taste the best.
Take a microwave oven-proof glass bowl. Pour in some oil. Spread the oil over the inner surface of the bowl using a brush or spatula. Now pour the mixed dough into the bowl.
Let the dough bake for 5 minutes in a microwave oven.
Heat the remaining oil in a small pan on a gas burner. Use medium flame. Add mustard seeds, curry leaves, whole chilis and the rest of the sugar. When mustard seeds make popping sound on the oil, add ½ cup water to the mixture. Wait for 3 minutes before turning off the gas. Keep the liquid syrup you just made aside.
Check if the dough is fully baked. If ready, take out and allow it to cool down. Next, sprinkle the syrup all over the top surface of the baked dough or Dhokla. Garnish with whole chilis and curry leaves.
You can slice the Dhokla into triangular shapes while serving.
