SriLankan Chicken Curry

SriLankan Chicken Curry or as it’s locally known, ‘Kukul Mas Curry’ is a lip-smacking chicken dish with a touch of spices like cinnamon and cardamom. It’s a SriLankan recipe; the curry is made with virgin coconut oil.

SriLankan Chicken Curry: Ingredients

  • 1 tbsp of coriander seeds 
  • 1 tbsp of cumin seeds 
  • 1 tbsp of black peppercorns 
  • 1 tbsp of black mustard seeds 
  • 4 cloves 
  • 4 cardamom 
  • 1 tbsp of fennel seeds 
  • 3 Dry red chillies
  • 1 cinnamon stick

Ingredients for the Curry base  

  • 4 finely chopped garlic 
  • 1inch finely chopped ginger  
  • 2red dry chillies 
  • 2spring curry leaves 
  • 1tbsp of turmeric powder 
  • 250 ml of coconut milk 
  • 300 grams of chicken finely cut into pieces  
  • 1 tbsp of cooking oil

SriLankan Chicken Curry: Procedure

  1. Wash thoroughly the chicken pieces and put them aside. Then follow the steps. 
  2. In a saucepan add the ingredients for the spice powder which includes coriander seeds, cumin seeds, whole black pepper, corns, mustard seeds, cloves cardamom pods, saunf, dry red chillies and a cinnamon stick
  3. Roast the spices on medium heat for about 3 to 4 minutes until the spices get cracked
  4. Once the spices are roasted, switch off the heat and let the spices cool down
  5. Add the spices in the mixer grinder and make the spice powder.
  6. In a pressure cooker, heat coconut oil on medium flame. Add ginger, garlic, onion, red chillies and curry leaves
  7. Then saute for about 4 to 6 mins until the mixture turns into deep brown colour
  8. Then add the SriLankan curry powder and blend with the mixture
  9. Next, add chicken pieces and 2 cups of water. Cook the ‘Kukul Mas Curry’ for about 20 minutes
  10. Check if the chicken pieces have been cooked well, then pour the coconut milk into the curry and blend well

SriLankan Chicken Curry can be best enjoyed with long grain rice
