The Very Vegan Banana-blossom Kofta

Banana-blossom Kofta is a purely vegan and traditional dish from the coastal parts of India. The ingredients are super simple, but the final preparation tastes delightful. It doesn’t require deep frying, so the dish retains the natural iron contents of the bannana-blossom. Not so impressive by the looks, the kids may resist initially. But once they taste it, they are absolutely going to love it.

You can use these Koftas as patties for burgers and pack them into lunchboxes without hasitation.

Banana Blossom Kofta: Ingredients: 

  • Banana Blossom/Heart- 1
  • Ginger Paste- 2 spoonful 
  • Green Chilly Paste-1 spoonful
  • Raisins- 30 grams
  • Rice powder- 1 spoonful
  • Roasted Gram flour-  1 spoonful 
  • Turmeric powder- ½ spoonful 
  • Salt-  to taste
  • Sugar-  1 spoonful 
  • Asafoetida-  a small pinch 
  • Ghee/Indian clarified butter-  2 spoonful
  • Garam Masala powder- ½ spoonful 
  • Cumin seeds- 1 spoonful 
  • White oil for frying 

Banana Blossom Kofta: Recipe

Wash the banana blossom well. Then boil it in water mixed with turmeric powder and salt. 

Chop the boiled banana flower into tiny pieces. You can use a chopper or use your hands. But don’t make it into a very fine paste– keep its granular texture.  

Heat ghee in a pan. Add cumin seeds and asafoetida into it. Once these are light-fried, add ginger paste and green chilly paste. Stir mildly. After a minute or so, pour chopped banana flower paste, rice powder, roasted gram flour, raisins, sugar, salt and garam masala. Stir with a spatula to mix all ingredients well; make sure the ghee is soaked into the mixture. 

Now take the dough out of the pan. Allow it emit some heat. Once you are able to touch it by hand, divide it into small round pieces. Press the pieces lightly between your palms to make puffy, round-shaped cakes. 

Next, fry them in white oil. 

The preparation goes well tomato or barbeque sauce and onion rings.
