Mushroom Baby Spinach Butter Sandwich

Mushroom Baby Spinach Butter Sandwich is a yummy vegetarian Sub, that can be taken as a quick snack or brunch. Sandwich is generally considered healthy, containing vegetables, sliced cheese, sauce, mayonnaise and raw or processed meat patty. Sandwiches exist in numerous avatars in most countries where baked bread exists– both in vegetarian and non-vegetarian forms.

We chose this recipe knowing that kids love it, and it can be an excellent lunchbox idea. Like many subs, it doesn’t have any patty. Instead, we will cook an aromatic paste using spinach, butter, herbs and the mushrooms. 

Mushroom Baby Spinach Butter Sandwich: Ingredients 

  • White Button mushroom- 16
  • Baby spinach- 1 bunch
  • Butter- 3 tbsp 
  • Mixed herbs– 2 tbsp
  • Chopped Parsley leaves- 2tbsp
  • Garlic – 5 quads
  • Black pepper-1 tbsp
  • Salt to taste
  • Honey- 1 tbsp
  • Pistolet bread  (in absence, try a long loaf) 

Mushroom Baby Spinach Butter Sandwich: Preparation

  • First wash the mushrooms well, dry off and cut each into halves
  • Wash baby spinach and let them dry. After they get dried, chop spinach into small bits. The spinach has to be absolutely fresh for  the aroma and taste of the sub
  • Finely chop off the garlic
  • Take a non-stick frying pan on low flame and add 2 tbsps of butter. Add the chopped garlic and mix them well. After that add the mushroom pieces and the chopped spinach along with salt. Blend them well and stir continuously 
  • Once the paste loses most of its water content add the mixed herbs, chopped parsley leaves and black pepper. Stir on low flame till you make a thick paste without losing the aroma of the original ingredients
  • Take the loaf, cut into two halves and apply butter on flat surfaces. Then create a layer of the sandwich paste you just cooked between the breads,  make a thin film of honey along the layer and press the breads together. Pistolet is a long bread, you may want to cut into smaller parts while serving.

    Serve your sandwich hot with a glass of chocolate milk, the kids are going to love it.
