Oats Uttapam with Mozzarella

Uttapam is a thick, savoury South Indian variety of pancake, whose main ingredient is usually a fermented batter made of lentils and rice. It generally has chopped vegetables added to it. 

The light-fried savoury, slightly tangy pancake is considered healthy and is a good occasional break from the sweeter and lighter versions of its western variety. 

It’s worth mentioning that for our Oats Uttapam dish here we will not ferment the batter.

Oats Uttapam Ingredients 

  •  1/2cup of oats (rolled)
  •  1/4cup of rice flour
  •   2 tbsp of curd
  •   Salt to your taste 
  •   Water as required to make the batter
  •   Mozzarella cheese, grated, 25 grams
  •   White oil – to grease the Tawa and for frying

   Veggies that you need to add

  • Onion, finely chopped- 2
  • Carrots, finely grated-  3
  • Tomatoes, finely chopped- 2
  • Green chillies, finely chopped- 2
  • Coriander leaves, finely chopped, 2 tbsp  

Oats Uttapam- Getting the Ingredients Ready 

  • Put the oats into a blender jar and make a fine powder

  • Add the rice flour(semolina) over the oats into the blender and blend again

  • Transfer the mixture of oats-and-rice flour into a mixing bowl and add salt, yoghurt and soda to it

  • Blend the mixture along with water to make a batter of medium thickness.In south India, the craft of preparing a batter of just the right thickness is considered an art. It should be thick-ish but at the same time should maintain consistency while spreading evenly on a flat frying surface

  • Check the salt content of the batter, add more if needed. Cover and allow the batter to settle for about 5 mins

  • Now chop the onions, tomatoes, chillies and coriander leaves

  • Grate the carrots

  • Blend together all the veggies on the chopping board and keep them ready

    Oats Uttapam Cooking Procedure

  • Grease a Tawa with a few drops of white oil on it and heat on a medium flame

  • Mix the batter well and adjust the consistency by adding water if needed

  • Then pour a ladleful of batter and spread it evenly on the Tawa

  • Sprinkle the veggies on the batter right now as it helps them to stick to the uttapam

  • Cook well until Uttapam/pancake turns crispy

  • Flip and cook the other side as well

  • Sprinkle grated mozzarella over the Uttapam 

Remove the oats uttapam to a serving plate. Serve it with the iconic White Chutney of South India or pickle. You can make them yourself or buy from supermarkets or online.
